2 med. pieces of Conch diced. 1 medium onion diced , 1 small hot pepper diced, 1/2 bell pepper,( assorted color to make the fritter colorful.
2 teaspoon tomato Paste,
1 1/4 cup of flour or use pancake mix 1 tsp,baking powder,1 tsp of Caribbean Rice,1 tsp salt mix together with 1 egg beaten add diced conch,onion,bell peppers, add hot peppers after you fry one conch fritter to test heat. heat oil, not to hot, drop batter by tablespoon in hot oil and fry approx 4 minutes on each side until golden brown, test one, watch out brown on outside and raw on inside. this is on you.
NOTE If you cannot find conch, use shrimp, lobster or some seasoned diced chicken.
