Conch Fritters

1/4 lbs cleaned conch(diced)
1 small onion
1 stalk celery
1 egg   
1 cup milk
1 tbsp hot sauce or add some hot pepper
pinch of black pepper
1/2 tsp salt
red bell pepper.       
2 tbsp tomato paste   
1 tsp baking powder   
1-1/4 cups flour (try using pancake mix) {Secret}
1 tsp  King Louie Nassau Rice Seasoning. Add more if needed.

Where conch is not available you can substitute  shrimp or lobster.

Put conch, bell pepper, onion & celery through a meat grinder, chopper or food processor.  Add remaining ingredients to make a batter. Drop batter by tablespoon into hot oil and fry for approx. 7 min. or until golden brown.

Serve with cocktail sauce: 1/2 cup ketchup, 1/2 tsp horseradish, 1 tsp hot sauce. Mix, serve, dip conch fritters.
